Schiacciata con l'uva

Today for our dessert we go to Tuscany with a delicious recipe that was given to me by a splendid Tuscan cook. Schiacciata con l'uva is an interesting match between sweet grapes and savory rosemary.

Ingredients:
500g of plain flour
1,5 teaspoon instant dry yeast
1/2 cup of olive oil
sugar
600g of small black sweet grapes
few sprigs of rosemary

Place the flour on a bowl and dig a hole in the middle. Pour a little bit of warm water a teaspoon of sugar and the yeast. Start kneading dissolving the yeast with your hands and slowly mix the flour as well. Add as much water as you need to obtain a compact ball. Let it rise for 1 hour.
In the meantime, tear off the grapes from the bunch, wash and drain them well. Warm up the olive oil with the rosemary, then let cool down.

Back to the dough.
Add most of the olive oil to the dough (leave some to grease the tray later) and knead again. Add also half of the grapes and 3 tablespoons of sugar. The dough will become sticky and less compact.

Grease the tray with the rest of olive oil, stretch out the dough on the tray and top with the rest of the grapes. Let it rise again for 1 hour, covered with a cloth.

Before baking, sprinkle with couple of tablespoons of sugar, then bake for at least half hour at 180°C.
