Spinach Dip in a Cob Loaf

I have learnt this recipe here in Australia that I find just amazing. The idea to put a dip in a bread "bowl" is very smart and makes it perfect for your picnic. Here a revisited version:

 Ingredients:

1 Cobb loaf (White or Wholemeal)
2x250g packets of frozen spinach
half onion
250g of ricotta cheese
100g of parmesan cheese
salt, pepper and nutmeg
Chop the onion finely and brown it in a fry pan with some oil olive ten add the frozen spinach and let it cook. Cut out the centre of the Cobb loaf making a well in the middle.

Brake away bread from inside Cobb to use as dippers. Place Cobb loaf in the oven for 5-10 minutes until slightly toasted.
Once the spinach are cooked, let it cool down then mix the ricotta, the parmesan cheese, salt, pepper and nutmeg.

Place dip mixture into the centre of the Cobb and place in the oven for a further 10 minutes or until Cobb is crusty and dip is hot.
